cheesy bacon and corn muffins

















ivy has been baking muffins for her housemates and members of her church care groups. she will be baking some for me to take back to singapore. decided to take down the recipe so that i can make my own when i get home.

preheat oven to 200 degrees celcius. grease a medium 12-hole muffin tray. fry 125g shortcut bacon in a non-stick frying pan for 3 minutes until crisp. cool.


sift one and three-quarters cups of self-raising flour into a bowl, add two cups grated cheddar cheese and stir to combine. whisk one and a half cups milk, egg and 60g butter together. add to flour with corn and bacon and mix quickly and lightly together.


divide mixture among 12 muffin holes. bake for 20 minutes until brown. cool on wire rack.
